Tasting Notes: Cabernet Franc is a fruitier relation of Cabernet Sauvignon, less herbaceous and with less tannin. The nose is full of violets and raspberries, bright berry fruit, green pepper and a leafy undertone.

Food Pairings: Cabernet Franc is excellent with sharper, stronger vegetables such as eggplant and zucchini, and holds its own with red meats, game, and organ meats.

Winemaking: The use of several vineyards throughout the Okanagan Valley has led to this fruit forward, well-structured wine. The grapes from the individual vineyards were crushed and fermented separately at cool temperatures. The wine was then racked to French and American oak barrels and allowed to undergo a malolactic fermentation. After 10 months, this wine was removed from oak, blended, fined and filtered before being bottled.

Aging Potential: This softly tannic wine is vinted to be enjoyed immediately, or cellared for up to 5 years.
