We suggest that you decant this wine before enjoying. This will serve to “open up” the wine as well as remove any crystals that may have formed in the bottle. These crystals are potassium bi-tartrate, formed by tartaric acid—the predominant acid found naturally in grapes.
Affectionately called “wine-diamonds”, these crystals are more often found in red wines because white wines undergo cold-stabilization—vigorous cooling and mixing to precipitate these crystals, followed by filtration. We treat our red wines as gently as possible and so have opted not to put them through this type of rigorous treatment.
