2007 Viognier

Tasting Notes: This Viognier has a powerful, rich, and complex aroma of ripe apricots mixed with orange blossoms. A touch of oak makes for a palate that is full and creamy with lemongrass notes.

Food Pairings: The highly aromatic and fruit forward nature of the grape allows Viognier to pair well with spicy foods such as Thai cuisine.

Winemaking: After a small amount of skin contact followed by cold settling, this wine was allowed a long slow fermentation in stainless steel. Post fermentation, a portion was put through an oak-enhanced, malo-lactic fermentation to smooth the palate and soften the grape's inherent acid backbone. Extensive lees stirring further rounded the mouthfeel, while maintaining the fresh fruit of this exciting grape.
