2006 Reserve Merlot

Tasting Notes: Our premium Merlot was aged in both French and American oak, giving it smooth approachable tannins and a well-balanced finish. This wine shows a predominance of dark cherries, vanilla and milk chocolate throughout.

Food Pairings: Enjoy with rich meats and hearty pastas.

Winemaking: Fruit for this wine was sourced from the warmer Okanagan region of Oliver. Fermented at warm temperatures in open top fermentation tanks resulted in a complex rich wine. This wine was stored in predominantely new French & American oak before being selectively blended and bottled. We suggest that you decant this wine before enjoying. This will serve to “open up” the wine as well as remove any crystals that may have formed in the bottle. These crystals are potassium bi-tartrate, formed by tartaric acid—the predominant acid found naturally in grapes. Affectionately called “wine-diamonds”, these crystals are more often found in red wines because white wines undergo cold-stabilization—vigorous cooling and mixing to precipitate these crystals, followed by filtration. We treat our red wines as gently as possible and so have opted not to put them through this type of rigorous treatment.

Aging Potential: This wine was made to age for 5-7 years post-bottling.
