Tasting Notes: Cabernet franc sourced from the black sage road area of Oliver was picked on November 6 2008, after a mild fall afforded super long hang time to the fruit. Grapes were sorted and destemmed then given a 3 day cold soak. Extended skin contact of 20 days with careful cap management brought out a smooth, even and powerful tannin profile. Drained to new (6%) and older American oak barrels, the wine underwent malo-lactic fementation then matured for a total of 11 months in barrel. Food Pairings: Our 2008 Cabernet Franc is a perfect match with New York steak and Morel Mushroom sauce, or grilled lamb chops, served simply with salt and black pepper.
