Tasting Notes: Rich with complex flavours of red currant, chocolate and aromas of sweet cedar and cigar, this wine has powerful but approachable tannins. Food Pairings: This Cabernet Franc pairs well with roasted duck or grilled venison. Winemaking: Grapes were sorted, de-stemmed and given a 72 hour cold soak prior to fermentation. Careful cap management brought out the ripe tannin and colour from the skins, then the wine was drained to small American oak barrels for 14 months maturation. Final blending realized the smooth richness of this wine.
