Winemaking: Grapes were sorted, de-stemmed and given a 72 hour cold soak prior to fermentation. Careful cap management brought out the ripe tannin and colour from the skins, then the wine was drained to small American oak barrels for 14 months maturation. Final blending realized the smooth richness of this wine.
